Territory Series — Indonesian Sumatra
Field Note — Indonesian Sumatra
Mandheling. Northern Sumatra. Dense jungle, volcanic soil, and a processing method found almost nowhere else on earth.
Wet-hulling — called Giling Basah — is how Sumatran farmers have processed coffee for generations. It produces a cup unlike anything else in the Territory Series: low acidity, heavy body, and an earthiness that doesn't apologize for itself. We chose Sumatra because it's the opposite of safe.
Tasting Notes by Roast
- Medium: Dark chocolate, tobacco, smooth body. The roast that shows Sumatra at its most balanced.
- Dark: Smoky earth, molasses, full body. The heaviest cup in the Territory Series. Built for the frontier.
Small batch. Roasted to order.
